Hello,
I am going to be putting together my first CNC in the next month or so, and was wondering if I should wait for an upcoming release to use the new 12.04, or should I just install latest one, and upgrade to 2.5?

You may have to wait a long time. The realtime patch we use is not available for the kernel that 12.04 uses - yet.
so i would say use 10.04 and 2.5
